Ingredients:

4 large bell peppers (any color), tops removed and seeds removed

1 cup cooked quinoa

1 cup canned black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 cup salsa (store-bought or homemade)

1 cup shredded cheese (such as cheddar, Monterey Jack, or Mexican blend)

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

Fresh cilantro leaves, chopped (for garnish, optional)

Avocado slices (for serving, optional)

Sour cream or Greek yogurt (for serving, optional)

Instructions:

Preheat the Oven:

Preheat your oven to 375°F (190°C).

Prepare the Bell Peppers:

Cut the tops off the bell peppers and remove the seeds and membranes from inside. If needed, trim the bottoms slightly so the peppers stand upright in a baking dish.

Prepare the Filling:

In a large mixing bowl, combine the cooked quinoa, black beans, corn kernels, salsa, shredded cheese, chili powder, cumin, salt, and pepper. Stir until well combined.

Stuff the Peppers:

Spoon the quinoa and black bean mixture evenly into the hollowed-out bell peppers, pressing gently to pack the filling.

Bake the Stuffed Peppers:

Place the stuffed bell peppers upright in a baking dish or oven-safe skillet. Cover the dish with aluminum foil.

Bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the filling is heated through.

Serve:

Remove the stuffed peppers from the oven and let them cool slightly.

Garnish with chopped cilantro leaves, if desired.

Serve the stuffed peppers hot, with avocado slices and a dollop of sour cream or Greek yogurt on the side, if desired.

Enjoy:

Enjoy these delicious stuffed bell peppers as a satisfying vegetarian meal!
