 Kola Kanda, or Herbal Porridge, is a traditional Sri Lankan breakfast dish that is both nutritious and flavorful. It's made by cooking a mixture of rice, coconut milk, green leaves (such as gotu kola or spinach), and spices. Here's a simple recipe to make Kola Kanda at home:



Ingredients:


1/2 cup white or red rice (washed and drained)

2 cups water

1 cup coconut milk

1 cup chopped green leaves (gotu kola, spinach, or other leafy greens)

1-inch piece of ginger (finely grated)

2-3 cloves garlic (finely chopped)

1 small onion (finely chopped)

1-2 green chilies (optional, finely chopped)

1/2 teaspoon turmeric powder

1/2 teaspoon fenugreek seeds

1/2 teaspoon cumin seeds

1/2 teaspoon mustard seeds

Salt to taste

Juice of 1 lime or lemon

Freshly ground black pepper for garnish

Freshly grated coconut for garnish (optional)

Instructions:


Prepare the Rice:


Rinse the rice under cold water until the water runs clear. Drain the rice and set it aside.

Cook the Rice:


In a large saucepan, combine the rice and water. Bring it to a boil over medium heat.

Once boiling, reduce the heat to low and let the rice simmer, covered, for about 20-25 minutes, or until the rice is cooked and tender. Stir occasionally to prevent sticking.

Prepare the Spice Mixture:


While the rice is cooking, prepare the spice mixture. In a mortar and pestle or spice grinder, grind the fenugreek seeds, cumin seeds, and mustard seeds into a coarse powder.

Cook the Porridge:


Once the rice is cooked, add the coconut milk, chopped green leaves, grated ginger, chopped garlic, chopped onion, green chilies (if using), turmeric powder, and ground spice mixture to the saucepan.

Stir well to combine all the ingredients. Add salt to taste.

Cook the porridge over medium-low heat, stirring occasionally, for about 10-15 minutes, or until the green leaves are wilted and cooked through. Add more water if needed to achieve your desired consistency.

Finish and Serve:😀😀


Remove the saucepan from the heat. Stir in the lime or lemon juice.

Ladle the Kola Kanda into serving bowls. Garnish with freshly ground black pepper and freshly grated coconut, if desired.

Serve hot as a nutritious and comforting breakfast dish.
